Holiday Pie Bite Trilogy
(Apple, Maple Pecan,& Pumpkin Bites)
These tiny little bites of goodness are inspired by my love of LaraBars. If you have 5 minutes of time and want to save yourself some money, just take a little trip over to see my good friend Trader Joe’s house and get yourself some bags of nuts and a basket of medjool dates. You’ll have enough pie bites to keep you satisfied for weeks.
Maple Pecan Pie Bites
1 cup pecans
1 cup cashews
1 tsp maple syrup
½ tsp vanilla extract
¼ tsp cinnamon
3 dates
1 cup cashews
1.5 tsp pumpkin pie spice
Dash of pink himalayan salt
5-6 dates
½ cup almonds
1 cup cashews
½ tsp nutmeg
1 tsp cinnamon
¼ tsp pink himalayan salt
What to do:
1. Put dates in food processor and process until finely chopped
2. Add all other ingredients into food processor and process together with the dates. Process until it starts to clump together to form a ball.
3. Press into a pan lined with wax about 1/2 -1 inch thick and place in fridge for about 15-20 minutes. Take out and cut into bite sized squares. You can also store them in the fridge until ready to eat.
Enjoy your mini pie bites at work, for breakfast, during the holidays when you have a sudden pie craving, all of the above, etc etc…
