Paleo Vegan Double Chocolate Chunk Cookies

Cookies 3I must preface this with the statement that while these cookies are technically paleo deliciousness… one must try not to eat the entire batch. You will want too. Consider yourself warned.

Having a wheat intolerance, I pretty much avoid anything with wheat in it… or else I’ll feel pretty sick. Thank you GMOs. One of the hardest things to do though is to not buy every wheat-free/gluten-free item at Whole Foods. 1. I’d be broke. 2. Gluten-free does not mean low-calorie.

BUT SOMETIMES, you just need a cookie. And that’s where these come in handy. All you need is ten minutes and yes that includes baking time.

2 cups almond flour 1/4 coconut oil (melted)

2 tbsp cocoa powder 3 tbsp maple syrup

3 tsp vanilla extract 1/2 tsp baking soda

1/4 tsp salt

1/2 dark chocolate chip chunks (I like the Enjoy Life brand, but you can also just chop up a bar of dark chocolate)

 

 

What to do: 1. Preheat oven to 350.

2. Mix all ingredients until it forms a dough ball

3. Add chocolate chunks in.

4. You can do one of two things. One you could take a teaspoon size of the dough and roll them into balls OR you could roll the whole batch of dough into a log and cut 1/2 inch slices. Then you just place the slices on a cookie sheet (I made mine this way. Note: these cookies don’t flatten too much in the oven, they pretty much stay in the same shape that you bake them in. Just know this.

5. Bake for about 8 minutes and let cool. Enjoy!
