Chocolate Vegan Ice Cream

Paleo, vegan, healthy ice cream? Yup, it’s possible- Thanks to this delicious recipe that my friend, Cindi Mitchell, shared with me! This ‘ice cream’ is loaded with potassium, protein and vitamins, doesn’t have any sugar or dairy, and it tastes just like chocolate ice cream. On those days when you just want a sweet dessert… this will surely satisfy your craving.

Cut and put in bags

Before making this recipe, peel and place bananas in freeze-safe bags and put in the freezer so you can grab them easily each time you want to make the ice cream. Tip! I cut the banana into slices before freezing it so it’s easier to blend.

Dakota and the Freezer

Sidenote- I like to freeze a bunch of bananas at once so that I can make this ice cream at any time. While I do this, my dog, Dakota vigilantly stalks me in hopes of catching fallen slices (ok she really just sits there waiting until I inevitably toss her a piece).

Ingredients:
1 Frozen banana
1 Tablespoon unsweetened cocoa powder
1 Tablespoon all-natural peanut butter (use almond butter to make it paleo)
1 Tablespoon vanilla extract
A splash or two of almond milk
What to do:
Put all the ingredients into a blender or food processor and blend. If the ice cream comes out too soupy, use a little less almond milk. If you eat it right away, it will be like chocolate soft serve, and if you put it in a tupperware container in the freezer when you’re done, it will freeze up just like hard ice cream. Enjoy!!
