
For those football parties you may or not be attending/throwing, try making this HEALTHY Buffalo Chicken Wings and Blue Cheese Dip recipe for Superbowl 2013.
Chicken Bites:
Ingredients
5 pieces of chicken breast
1.5 cups bread crumbs (use almond flour with 2tsp of italian seasoning for a gluten free/paleo version)
1 tbsp cayenne pepper
1/2 tsp chili powder
1/4 tsp salt
5 tbsp hot sauce (I used Frank’s)
Preheat oven to 350. Cut the chicken breasts into bite sized nuggets, and set aside. Mix breadcrumbs, cayenne, chili, and salt in a larger bowl and coat chicken pieces in this mixture. Place chicken pieces on a cookie sheet and cook for 15-20 minutes or until fully cooked. I like to turn the chicken over halfway through, through the pieces are small enough to just let cook.
When chicken is done, toss with hot sauce in a large bowl. If you want it to be crispy, you can put the bites back into the oven on high broil for 2-3 minutes. Serve with dip (below).
Meanwhile make the Blue Cheese Dip: Typically, this dip is SO bad for you, alas I have created a super healthy version for your enjoyment.
Blue Cheese Dip:
1 cup cottage cheese
1 6oz cup of plain greek yogurt
3 tbsp blue cheese crumbles (then an additional 3-5 tbsp to use later)
2 tbsp white vinegar
1/2 tsp salt
Use a food processor to blend all ingredients aside from the additional blue cheese. Blend well. Place in a serving bowl and add the additional blue cheese.
