What’s Up Choc?!
Special thanks to Heidi Johnson for this delicious recipe packed with vitamin A! Heidi’s idea of adding carrots instead of oil is ingenious. Typically, applesauce replaces the oil to make “healthier” recipes, however carrots contain many more nutrients, and their taste is undetectable in these cookies which will make it a favorite with kids!
Ingredients:
¼ cup vegetable shortening
½ cup sugar
¼ cup brown sugar
1 jar of baby food carrots
1 egg
1 tsp vanilla
1 cup flour
1/3 cup cocoa
3/4 tsp salt
½ tsp baking soda
½ bag Mini Chocolate Chips
Cream shortening, sugar, brown sugar. Add carrots, egg and vanilla and beat until light and fluffy. Add flour, cocoa, salt, and soda. Mix well. Add chips. On a cookie sheet sprayed with Pam spoon teaspoonfuls of batter spread at least 1 inch apart. Bake at 375 degrees for 10-12 min. Cool and Enjoy!
